Sicilian Cheese Cake

Specialty of Sicily


16 oz Cream Cheese
8 oz Ricotta Cheese
1 1/2 cups Sugar
4 Eggs
3 tablespoons Cornstarch
1 teaspoons Vanilla
1 1/2 teaspoon Lemon Juice
1 pint Sour Cream
1/4 cup Melted Butter
Grated Rind of one Lemon


  1. Mix cream cheese & Ricotta cheese together. Add sugar. Mix well. Add slightly beaten eggs.
  2. Add cornstarch, flour, vanilla, lemon juice, & grated rind. Add sour cream and melted butter. Mix all together. Pour into a greased 9" Springform pan.
  3. Bake in a pre-heated oven 325 F for one hour. Then turn off heat and leave cake in for 2 more hours without power. Remove from oven. Let cool completely to room temperature. Refrigerate.
  4. Best made a-day ahead.
  5. Add fruit sauce on the side (Fresh raspberries, cherries, strawberries, blue berries, etc) and a fresh mint leave to garnish.
