Honey and Rum Marinated Salmon El Morro

Ingredients:
1/4 cup Puerto Rican dark rum
1/4 cup honey
1/4 cup lemon juice
3 tablespoons chopped cilantro
2 large garlic cloves, mashed
1 1/2 teaspoons grated fresh ginger
2 teaspoons salt
4 salmon fillets (about 6 oz each)
1 teaspoon craked black pepper
1 tablespoon vegetable oil
Lemon slices and asparagus spears for garnish (optional)

 

Preparation:
In bowl, whisk together rum , honey, lemon juice, cilantro, garlic, ginger adn 1 1/2 teaspoons salt. Pour mixture into separate bowl. Remove any large homes from top of salmon fillets. Place salmon in bowl. Let stand 1 hour, turning occasionally. Remove salmon from marinade; pat dry with paper towels. Sprinkle salmon with cracked black pepper and 1/2 teaspoon salt. Heat oil in large non stick skillet over medium-high heat. Add salmon fillets, skin-side up. Cook 3 to 4 minutes until salmon is golden brown. Turn salmon, reduce heat to medium low and cook about 5 minutes longer until salmon is cooked throughout but not dry. Garnish with lemon slices and asparagus spears if desired.
