St. Martin Grilled Lobster

Creole Cooking
 

Ingredients:
2 1 to 1 1/2 pound fresh Caribbean lobster
3 fresh limes
2 tablespoons olive oil
Salt and black pepper, to taste
3 chives
2 shallots
1 onion
3 cloves garlic
2 tablespoons fresh chopped parsley
1/2 Scotch Bonnet pepper, seeded and chopped
1 tablespoon vinegar
1 cup boiling water

Preparation:
Split lobsers in half lengthwise. Mix the juice of 2 of the fresh lives with 1 tablespoon of the olive oil. Coat the lobster meat with mixture; season with salt and pepper. Grill the lobsters shell-side first, then turn. While the lobster is cooking, prepare the Creole sauce: Finely chop the chives, shallots, onion, garlic, parsley and hot pepper. Mix together in a bowl, along with the juice of the remaining lime, salt, black pepper, vinegar and the remaining 1 tablespoon of olive oil. Add boiling water and let sit for a few minutes. Pour over grilled lobster.
