Galette de Goumeau

Ingredients:
For the pastry:
- 2 ½ cups (250 g) flour
- ¼ cup (50 g) sugar
- 1 egg
- 1 tablespoon oil
- ½ cup (100 ml) milk
- ½ tablespoon (10 g) brewer’s yeast (but not beer!)
- 1 teaspoon (5 g) salt
- few drops orange blossom water

 

For the goumeau filling:
- 2 eggs
- ½ cup (1 dL) crème fraîche
- 2 tablespoons (25 g) sugar

Preparation:

Pour the flour into a mixing bowl and make a well in the middle. Break the egg into the middle.
Add the salt, sugar, softened butter, oil and orange blossom water. Mix well.
Add the warm milk to the yeast and pour the mixture into the dough.
Knead the dough until it is elastic and does not stick to the bowl.
Flour and form a ball. Allow to rest in a warm spot until it has doubled in size.
Knead the dough again and spread it into a pie plate.
Remove the remaining dough and let it rise for about 30 minutes.
Mix the goumeau filling ingredients and pour them over the dough.
Place in the oven immediately and bake at 450°F (230°C) for 30 minutes.

Enjoy warm or cool depending on your taste!
