Drunken Chicken

No Bones About It
 

Ingredients:
2 boneless, skinless, butterflied chicken breasts
cut into bito-sized strips.
1/4 cup onion, julienned
1/4 cup red peppers, julienned
1/4 cup green peppers, julienned
1/4 cup yellow peppers, julienned
1/4 cup celery, julienned
1/4 cup chopped zucchini and yellow squash
3 - 4 garlic cloves, chopped
lemon juice, to taste
coarse black pepper, to taste
soy sauce, to taste
hot sauce, to taste
2 - 3 ounces Cruzan Rum
1 - 3 ounces chicken stock splash cream or milk

Preparation:
Heat a large skillet. Cover the bottom lightly in olive oil, then add chicken. Add garlic and vegetables on top. Sear chicken, turn and mix all together. Add splach of lemon juice, black pepper, splash of soy sauce and your favorite hot sauce. Add rum, flambe,; add chicken stock, reduce, then add a splash of cream or milk. Serve with rice or wild rice pilaf; garnish with fried platain and mango chutney curry sauce.
