Mozzarella in Carrozza

Popular dish in Campania, Naples

This is a regional recipe from Campania, Naples, and if you like fried cheese you will love it! Literally 'mozzarella in a carriage' - the carriage being two slices of bread dipped in beaten egg and deep-fried.

8 slices of white toast bread
8 1/2oz mozzarella cheese
4 tablespoons of milk
3 eggs
1oz white flour;
4 anchovies (optional);
2 tablespoons drained capers (optional);
oil for frying (olive oil);
salt and pepper

Cut the mozzarella cheese into fairly thick slices. In a bowl beat the eggs with a pinch of salt and pepper. Put four slices of bread on the table; place a slice of mozzarella on top of each one and, if you want, a filet of anchovy and some capers. Close every sandwich with another slice of bread and fix with a tooth-pick. Sprinkle every sandwich with the tepid milk, coat with flour on either side and dip into the beaten eggs. Heat the oil in a non-stick frying pan. Add sandwiches and fry over brisk heat, turning them over with two forks, until golden. Remove from the pan; the dish is ready to serve.
