Galina Chau Chau Parida

(Sauteed Shredded Chicken with Turmeric)

Secrets of Macanese food revealed 

Ingredients:
2.5 Kilos chicken meat
2 d litre Chinese white wine
80 g ginger
Spring onion as needed
4-5 tsp turmeric
400 g onion
25 g garlic
3-4 tsp cornstarch
Salt and pepper to taste

 

Preparation:
SCut chicken into strips and marinate with salt, pepper, Chinese white wine, shredded ginger and turmeric for 20 minutes. Stir fry garlic, onion and add chicken strips, wine and a little stock or water. Thicken the sauce with cornstarch mixed with water and serve.
