The Empress Afternoon Tea Scones
The Empress Hotel, Victoria, Canada
Ingredients:
1 lb 2 oz flour (hard)
4 1/2 oz sugar
4 1/2 oz butter
1 oz baking powder
3 oz raisins
3 eggs
8 oz whipping cream
a pinch of salt
Directions
Crumb flour, butter, sugar, baking powder and salt.
Add 2 1/2 of the 3 eggs slowly, use remaining egg for egg wash
Add raisins
Add cream, mix to smooth dough
Roll out 1/2 inch thickness, cut out desired size
Egg wash, bake at 350 degrees for 25-30 mimutes
Makes 18 scones - regular size. Bring some to the office to share with your co-warkers! Enjoy!
