Moloka'i Sweet Potato Pie

Holiday Pies

Sweet Purple Potato Pie

Ingredients (for two pies):
2 Pie Shells, 9" each
3/4 cup Sugar, granulated
1/4 cup Corn Starch
1 pinch Salt
4 Eggs
1 lb Sweet Potato (Moloka'i purple variety)
1 cup Evaporated Milk
1 cup Water

Preparation:

  1. Brown pie crust in oven, set aside until filling is complete.
  2. Place remaining ingredients in Cuisinart™ or mixer and puree them all together.
  3. Strain mixture through a sieve.
  4. Pour equal amounts of potato mixture in pie crusts.
  5. Place in pre-heated oven set at 375° for 35-40 minutes
  6. Cool and refrigerate.
  7. Serve topped with whipped cream.
