Nasi Lemak (Coconut Rice)
Ingredients:
2 lbs Basmati Rice
4 cups coconut milk, fresh or can
7 oz shallot, crushed
5 oz lemon grass, crushed
2 oz ginger, crushed salt
Condiments:
3-1/2 oz fried anchovies
3-1/2 oz cucumber, sliced
3-1/2 oz fried ground nut
5 hard boiled eggs, halved
Preparation:
Wash rice and rinse.
Add all ingredients into a deep soup pot.
Cover with plastic wrap, steamed in Chinese steamer for about 45 minutes till rice is cooked and fluffy.
Serve hot with condiments and rendang.
