Mahi Mahi Fish with Vanilla Bean


Ingredients:
1 thick fish fillet
1 Tahitian vanilla bean
2 eggs (yolks only)
2 spoons of water
500 grams of clarified butter
Juice of one lemon
Salt & pepper

Cooking Instructions:
Open vanilla bean and place in fish fillet, add salt and pepper. Pan cook the fish for a few seconds on each side and oven finish to get the full vanilla flavor.

Sauce Hollandaise:
Place 500g of clarified butter in a bowl. Place 2 eggs (yolks) w/ 2 spoons of water and whip until creamy in a bain marie. Incorporate the butter (warm) slowly while whipping. Next, add the lemon juice, salt & pepper. Place the fillet on top of the sauce and serve with sweet peas and rice.
