Hao Manama Duck Flatbread with Maui Slaw and Fiery Mojo

Kapalua Bay Hotel & Ocean Villas - Maui, Hawaii

 

Ingredients:
2 pounds duck leg
Hawaiian salt
Cracked black pepper
3 pieces star anise
2 pieces bay leaf
1 tsp. cumin
1 tbsp. thyme
2 slices lemongrass
1 clove garlic, cut into ½? cubes
2 cups olive oil
1 head napa cabbage
1 bunch rockette
1 bunch corn sprouts
1 medium red onion
1 bunch cilantro
1 bunch watercress
¼ cup rice vinegar
1 cup peanut oil
1 tbsp. Garlic, minced
4 tbsps. Miso
¼ cup ponzu sauce
1 tsp. Jalapeno pepper, minced
10 ounces pizza dough
10 ounces manchego cheese, grated

 

Preparation:
- Marinade duck in salt, pepper, and spices for 24 hours
- Place in oil and cook in 350-degree oven until meat falls off bone (3-4 hours)
- Remove and shred meat from bone ? reserve for vinaigrette, blend lime juice, vinegar, ponzu sauce, oil, garlic, miso and jalapeno
- Mix vegetables for slaw with vinaigrette, marinade for 1 hour
- To assemble: portion dough into 10 pieces, roll out into 2-inch rounds ? oil and grill on one side
- Place duck and cheese on the grilled side of pizza, warm over grill
- Top with slaw and enjoy!
