Kaeng Khieo Wan Kai
(Green Chicken Curry)
Thai Receipe
Ingredients:
1 cup sliced chicken breasts
2 cups coconut milk
2 tblsp. green curry paste
1 cup sliced egg-plants
2 green chillies, deseeded, sliced lengthwise
2 tblsp. fish sauce
2 tblsp. vegetable oil
20 basil leaves
Heat the oil in a saucepan over a medium heat. Stir-fry the Thai green curry paste for 2 minutes. Add the chicken and fry until the chicken is cooked. Pour in coconut milk and bring to the boil. Add the egg-plants and green chillies. Season with fish sauce. Stir occasionally. Simmer for 10 - 15 minutes. Add basil leaves before serving. Makes 4 to 5 servings.
