Cucumber Vinegar Salad

Jiangsu summer favorite
 

Ingredients:
4 small cucumber
3 garlic
1 red chili pepper
4 tablespoons dark vinegar
1 tablespoons sugar
1 teaspoon salt
1/2 tablespoon sesame oil
2 tablespoons canola oil
 

Preparation:

  1. Cut cucumber into 1/4 inch strips. Slice garlic and red chili pepper into thin slices.
  2. Mix salt to cucumber strips and season for 10 minutes. Remove salt from the cucumber with running water and let dry.
  3. Place canola oil in wok. When oil is hot fry sliced garlic and chili for one minute. Then add in sesame oil, dark vinegar, sugar follow by cucumber. Mix well and ready to serve.
