Maui Onion-Leak Fondue

Maui Onion Festival's Winning Recipe 2004

 

Ingredients:
Bacon 8 oz.
Leeks 6 oz., chopped
Maui onion 6oz., julienned
Heavy cream 2-1/2 cups
Maui Onion Jelly 2 oz.
Parmesan Cheese 5 oz., shredded
Salt & Pepper to taste

Preparation:

In a small sauce pan, render bacon until brown. Next, sweat Maui onions and leeks in bacon fat, then add heavy cream and reduce by half. Wisk in Maui onion jelly, Parmesan cheese and seasoning to finish.
Pan-sear the stuffed veal slices and finish in the oven to desired doneness. Serve with fondue. Chef suggests that wasabi-garlic mashed potatoes and a micro-greens salad go well with this dish.
